A Culinary Journey Through the Middle East: Ramadan Iftar Buffet at Cinnamon Grand Courtyard .

By Shamindri De Sayrah

Embark on a culinary adventure through the Middle East this Ramadan at The Courtyard at Cinnamon Grand. Savour a meticulously curated buffet with Arabic flair that transcends boundaries and celebrates the essence of the season.

Chef Sami Ali Bazih, renowned for his expertise in Middle Eastern cuisine, has outdone himself with a diverse selection of Ramadan delicacies such as moussaka, kebabs, wraps, hummus, and Majboos rice that will tantalize the taste buds. The Ramadan buffet offers a delightful array of flavors and dishes that cater to a wide range of tastes, with some simple dishes added that are crowd favorites. With traditional dishes that reflect the rich culinary heritage of the Middle East, this Iftar buffet promises an unforgettable dining experience.

Appetizers

  • Lentil Soup (Shorbat Adas)

Lentil Soup, or Shorbat Adas, is a classic Middle Eastern dish, it had a smooth and velvety texture and was packed with just the right amount of spice so as not to overpower the taste of the soup. This simple yet flavorful soup made for a comforting and nourishing start to the meal, setting the stage for the feast to come.

Arabic Bread and Hummus

The section of breads provides a variety of different options, a perfect accompaniment to the selection of hummus, allowing guests to customize their experience. We tried the cheesy Arabic bread with the classic hummus and olive oil, which made for a great combination of creamy and cheesy, with just a slight hint of salty. The hummus was a perfectly smooth consistency, and had us going back for more.

Mains

  • Chicken Majboos (Arabic Rice)

This traditional rice dish was full of flavour from the spices and the chicken, the Majboos Dejaaj was favored with mild spices such as cardamom and cinnamon and came with generous servings of succulent chicken, topped with toasted nuts. It offered a delightful blend of aroma and taste, making it a must-try for anyone craving authentic Middle Eastern cuisine.

  • Make your own shawarma

The make-your-own shawarma section was undoubtedly a highlight of the Ramadan buffet. Offering a choice between tender beef and succulent chicken, guests could customize their shawarma experience by selecting their preferred vegetables. We opted for the chicken with all the fixings, and the end result was a creamy and juicy shawarma, fresh and bursting with flavor, thanks in part to the delectable yogurt and the aromatic spices infused in the meat. This was definitely a crowd-pleaser.

  • Kufta and Potato Stew (Dawood Basha)

With scrumptious and juicy lamb meatballs simmered in a tangy tomato sauce, alongside tender potatoes, this dish exudes a hearty and comforting vibe reminiscent of being home for the holidays, perfectly complementing the spirit of Ramadan. It’s best eaten alongside a bed of rice. Although this dish may not be for everyone, it will definitely be a enjoyed by those who enjoy mutton and a taste of tradition.

  • Kebab Section

Chef Sami took the liberty to include not one but three different meat options in the kebab section. Chicken, beef kofta, and fish. Providing something for every palate. We decided to try the chicken, which tasted great, and the meat was indeed juicy and filled with spices. However,  we were surprised at the absence of any special sauces, which would have elevated the dish further. Despite this, the kebabs were still a delicious addition to the buffet.

Desserts

  • Lady Fingers (Znoud El Sit)

Imagine a spring roll, but as a dessert, and you’ve got these Middle Eastern Phyllo Rolls. So crunchy and so delicious! Stuffed with a sweet decadent cream, drizzled with some sugar syrup, and topped with pistachios. This gives it a bit of a nutty taste as well. Crispy on the outside and creamy on the inside, these fun little treats are a must-try for anyone with a sweet tooth, offering a unique and delicious dessert experience.

  • Sago Pudding

Personally, this pudding would undoubtedly be a favorite dish. Its sweet, vanilla-like flavor and soft, smooth texture make it irresistible and incredibly delicious. Each spoonful is a delight for the taste buds. Topped with a slice of fresh mango, that complements the pudding perfectly. It’s a dish that can satisfy both a sweet tooth and someone looking for something simple for dessert lover after a heavy meal.

  • Egyptian Bread Pudding (Om Ali)

The traditional bread pudding served at the buffet is truly a delightful and satisfying dessert, offering layers of different flavors and textures. The crisp top layer, made with pastry and sprinkled with almonds and pistachios, adds a delightful crunch to each bite. Beneath it lies the bread, soaked in sweetened milk and flavored with cinnamon. A layer of thick cream on top adds sweetness to the dish as well as a rich, creamy texture.

Chef Sami’s creativity and skill in reinventing classic dishes are showcased throughout this buffet. One of the best things about it is the opportunity to discover new and exciting dishes. It’s a testament to the richness and diversity of Middle Eastern cuisine and a reminder of the endless possibilities when it comes to culinary exploration.
