From Dusk Till Dawn: The Visionary Behind Sri Lanka’s nightlife revolution.

By Vimasha Weerawansha

If you’re into nightlife and crave bold, unforgettable flavors, Sheran de Fonseka’s newest venture is where the party’s at! Combining his flair for lively cuisine with a love for good vibes, Sheran brings something fresh to the scene. Here’s what he has to say about the journey so far and what’s next on the menu.

1. Your journey has taken you from Colombo’s nightlife king to a restaurateur with a passion for innovative cuisine. What inspired you to make the leap from nightlife to the restaurant industry?

I’ve always been immersed in the restaurant world, starting with a Thai spot in Dubai that sparked my love for diverse flavors. From there, I dove into Sri Lankan fusion at Kama Colombo, explored Japanese cuisine at Skky Bar, and expanded into Euro-Asian flavors at Flamingo House.

2. Dragonfli has a unique twist on modern Asian cuisine. Can you tell us more about how you and Chef Malin De Silva crafted the menu, and what diners can expect when they visit?

Chef Malin De Silva and my partners  wanted to create a menu that reflects the vibrant tapestry of Asian flavors while incorporating a modern twist. We spent countless hours experimenting with ingredients, techniques, and presentation styles to ensure that each dish tells a story. Diners can expect a fusion of traditional and contemporary elements, with dishes that are visually stunning and bursting with flavor. We aim to surprise our guests with unexpected combinations that highlight the rich culinary heritage of Asia, all while making it accessible and enjoyable for everyone.

3. You’ve created some of Sri Lanka’s most iconic nightlife spots, like Love Bar and Liv Colombo. What key lessons from those ventures are you applying to Dragonfli?

From my nightlife ventures, I learned that ambiance and experience are key. A great night out is more than just drinks, and the same goes for dining. At Dragonfli, we focus on creating an inviting atmosphere, exceptional service, and a unique culinary journey.

4. How do you envision Dragonfli standing out in Colombo’s dining scene, which is seeing more diverse culinary influences lately?

In a city rich with culinary diversity, Dragonfli aims to carve out its niche by focusing on innovation and quality. We want to be a beacon for those seeking not just a meal, but a memorable experience. Our commitment to sourcing the finest local ingredients and presenting them in unexpected ways will set us apart.

5. Working with Michelin-trained Chef Malin De Silva is a huge asset. How has his expertise shaped the food experience you want to create at Dragonfli?

Chef Malin De Silva’s expertise has been pivotal in shaping Dragonfli’s culinary vision. As a MasterChef 2019 semi-finalist and with extensive experience leading renowned establishments such as the River Restaurant by Gordon Ramsay, The Savoy Grill, and Paradise Soho, he brings an exceptional blend of creativity and precision. His deep understanding of Michelin-starred standards and his innovative take on Asian-inspired cuisine leave no doubt that he will craft something truly unforgettable. Chef Malin’s ability to marry bold flavors with modern techniques ensures a dining experience at Dragonfli that is nothing short of magical.

6. In what ways does Dragonfli embody your belief that dining should be about more than just food and drinks, but a whole experience?

At Dragonfli, we believe that dining is an immersive experience that engages all the senses. From the moment guests walk in, they are enveloped in a carefully curated environment—from the decor and music to the aroma of the dishes being prepared. We also prioritize storytelling in our menu, encouraging diners to connect with the inspiration behind each dish. Our goal is to create a space where people can gather, share stories, and create lasting memories, making every meal an occasion.

7. Looking back on your journey, from Kama Colombo to now, what are the biggest challenges you’ve faced, and how have they helped you shape your current vision for Dragonfli?

Each venture has presented its own set of challenges, from navigating the competitive nightlife scene to understanding the intricacies of the restaurant industry. One of the biggest challenges was learning to balance creativity with operational efficiency. These experiences taught me the importance of resilience, adaptability, and strategic planning. They’ve shaped my vision for Dragonfli, emphasizing the need for a solid foundation while allowing for creative expression and innovation.

8. Your path from a rugby player and party enthusiast to one of Sri Lanka’s top entrepreneurs is inspiring. What personal qualities or habits do you think have been key to your success?

I attribute much of my success to my discipline and passion. My background in rugby instilled a strong sense of teamwork and perseverance, which I carry into my business ventures. Additionally, I maintain a curious mindset, always seeking to learn and grow, whether through travel, culinary exploration, or networking with other entrepreneurs. This combination of discipline, curiosity, and a willingness to take risks has been essential in navigating my entrepreneurial journey.

9. You’re known for setting trends in Colombo’s nightlife scene. What drives you to keep innovating and taking on new challenges in an industry that’s constantly evolving?

Innovation is at the heart of everything I do, and I thrive on creating new experiences. The hospitality industry keeps me excited with endless opportunities to explore trends, flavors, and ideas. I’m motivated by pushing boundaries and evolving, whether in nightlife or dining. Feedback from our guests also inspires me—seeing their reactions and hearing their stories drives me to keep improving and innovating.

10. As someone who’s taken on a variety of business ventures, how do you stay motivated and balance the pressures of entrepreneurship with your own well-being?

Spending quality time with my wife and daughter keeps me grounded and motivated. Whether it’s family outings or quiet dinners at home, these moments help me recharge and stay balanced. I also make sure to prioritize self-care through exercise and relaxation, which helps me manage stress and stay focused. Balancing my personal and professional life is key to maintaining my well-being and ensuring long-term success in both my business and my family life.

Sheran de Fonseka’s journey from nightlife mogul to innovative restaurateur highlights his passion for both creativity and connection. By blending bold flavors, memorable experiences, and a deep commitment to quality, he’s shaping Colombo’s dining scene one dish at a time. With the expertise of Chef Malin De Silva and a vision rooted in community and collaboration, Dragonfli is set to become more than just a restaurant—it’s an experience that keeps evolving.
