I've noticed that a lot of roads are named in sinhala which trips up navigation voice prompts. Eg: Turn left to [blank]. Why isn't a single standard followed?

I've never seen the roads named in Sinhala. Every single road in my google maps app has the name in English. Certain places eg petrol station, police station etc are named in both English first and then proceeded by the Sinhala characters. All the roads however are just in English. Is it perhaps an app/account setting that causes you to see Sinhala?

Interesting. I don't see any settings on the app that could affect something like this so I'm not really sure what's up.
And the voice thing: I've seen this happen on Uber's very often. Example: https://imgur.com/a/7Y28S
