Ritzbury Chocolate Marshmallow Mousse

<h3 dir="ltr">Got marshmallows and chocolate? Here's how to turn them into a delicious mousse!</h3> <h2 dir="ltr"> </h2> <h2 dir="ltr">Ingredients</h2> <ul> <li dir="ltr"> <p dir="ltr">1½ cups mini marshmallows</p> </li> <li dir="ltr"> <p dir="ltr">½ stick soft butter</p> </li> <li dir="ltr"> <p dir="ltr">9 ounces Ritzbury chocolate chopped into small pieces</p> </li> <li dir="ltr"> <p dir="ltr">¼ cup hot water (from a recently boiled kettle)</p> </li> <li dir="ltr"> <p dir="ltr">1 cup heavy cream</p> </li> <li dir="ltr"> <p dir="ltr">1 teaspoon vanilla extract</p> </li> </ul> <p> </p> <h2 dir="ltr">Method:</h2> <ol> <li dir="ltr"> <p dir="ltr">Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.</p> </li> <li dir="ltr"> <p dir="ltr">Put the saucepan, over heat, to melt the contents, stirring every now and again. Remove from the heat.</p> </li> <li dir="ltr"> <p dir="ltr">Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.</p> </li> <li dir="ltr"> <p dir="ltr">Pour into bowl and chill until ready to serve.</p> </li> </ol>

Here's our take on a mangonada with a local touch!</p> <p><strong>Ingredients</strong></p> <ul> <li>1 tbsp Kist Chili Sauce</li> <li>1/2 Lime</li> <li>1 tsp Chili Flakes</li> <li>1/2 Green Chili (chopped)</li> <li>Ice Cubes</li> <li>1 large bottle Kist Mango Nectar</li> </ul> <p><strong>Method</strong></p> <ol> <li>Blend chili sauce, lime juice, chili flakes, green chili and ice cubes</li> <li>Pour to a glass and top up with mango nectar</li> <li>Stir</li> <li>Garnish with chili flakes and a slice of lime</li> </ol>

<p>For all your "wise talks" over a cup of tea - Gnanakatha...</p> <p> </p> <h2>Ingredients:</h2> <p>Flour 250g</p> <p>Butter 50g</p> <p>Sugar 100g</p> <p>Baking Powder 3 tsp</p> <p>Eggs 01</p> <p>Lime Juice 1/2 tsp</p> <p>Vanilla Essence 1/2tsp</p> <p> </p> <h2>Method:</h2> <p>Mix sugar and butter</p> <p>Combine flour and baking powder in a separate bowl, mix well</p> <p>Add the flour mix to the sugar mix, add lime and vanilla, mix until it becomes a dough</p> <p>Make small balls from the dough, flatten</p> <p>Coat one side with water </p> <p>coat the sticky side with sugar</p> <p>Preheat oven to 180 C</p> <p>Bake for 20-25 mintues or until light golden brown</p>

<p>Deep Fried Octopus Ceviche cooked by Celebrity Mexican Chef Gabriela Ruiz Lugo.</p> <p> </p> <p>(10g flour, salt, pepper, vegetable oil for deep frying)</p> <p>Ingredients</p> <p>Baby octopus - 3 pieces</p> <p>Tomato 200g</p> <p>Onion 100g</p> <p>Lime juice 30g</p> <p>coriander 10g</p> <p>Green chillie peppers 10g</p> <p>Olive oil 45g</p> <p>Salt as needed</p> <p>Pepper as needed</p> <p>Avocado 120g</p> <p>Method</p> <p>For the Octopus</p> <p>Add salt and pepper to taste</p> <p>Add flour</p> <p>Deep fry, to make it crispy</p> <p> </p> <p>For the Ceviche</p> <p>Mix tomatoes, onion, lime juice, salt, pepper and olive oil.</p> <p> </p> <p>for plating</p> <p>Garnish with the tomato mixture, sliced avocado, coriander and green chilli peppers.</p>

Ritzbury Mocha Cheesecake (UYAMU)

<p>Make your gloomy day better with some of this sweet cheesy goodness!</p> <p><strong>Ingredients</strong></p> <ul> <li>1 packet Tikiri Marie</li> <li>4 tbsp Melted Butter</li> <li>300g Cream Cheese</li> <li>1 cup Sugar</li> <li>100g Melted Ritzbury Dark Cooking Chocolate</li> <li>2 tsp Instant Coffee</li> </ul> <p><strong>Method</strong></p> <ol> <li>Crumble biscuits and add to a pan</li> <li>Add melted butter, mix and pat to form a firm base</li> <li>Chill for 20 minutes</li> <li>In a bowl, blend cream cheese and sugar</li> <li>Add egg yolks and blend</li> <li>Add melted chocolate and instant coffee diluted in a little water and blend</li> <li>Whisk egg whites in a seperate bowl until it forms peaks</li> <li>Fold egg whites into the cheesecake mix</li> <li>Pour over biscuit base and chill for 4 hours</li> <li>Garnish with chocolate shavings</li> </ol>
