Carrot Halwa Recipe

We got a bit excited about Diwali and tried our hand at making an Indian sweet dish — carrot halwa. It tasted AMAZING!


  • 8 Large Carrots, grated
  • 3.5 cups Fresh Milk
  • 2 Tablespoons Ghee
  • 10-12 Tablespoons Sugar
  • 20 Cashews, finely ground
  • Seeds from 5 Cardamom pods, finely ground
  • Sultanas and cashews for decoration (optional)


  • In a pan, combine the milk and carrots and let to simmer over low heat until the milk has reduced by 75%.
  • Stir occasionally inbetween.
  • Once the milk has reduced, add the ghee, sugar and powdered cardamom to the mixture.
  • Continue to stire, and cook over a low flame.
  • Towards the end, add the cashews, and stir. 
  • Once all the milk has evaporated, scoop into bowl.
  • Decorate with sultanas or cashews and serve hot or cold.
