How It's Made: American Pancakes

Here's how to make some of the fluffiest pancakes to treat your mum for breakfast this Mother's Day - courtesy of Chef Namindra of The Kingsbury.

Serves 3-4 people

Ingredients

  • Flour - 270g
  • Baking powder - 12g
  • Sugar - 50g
  • Salt - 5g
  • Eggs - 3
  • Melted butter - 50g
  • Milk - 250 ml
  • Raspberry-blueberry compote - 200g
  • Caramelized pineapple - 200g
  • Maple syrup
  • Whipped cream
  • Strawberry garnish

Method

  1. Add baking powder to flour in a bowl
  2. Add sugar
  3. Add salt
  4. Mix
  5. Add eggs
  6. Add milk
  7. Add melted butter
  8. Mix to a smooth pancake batter
  9. Butter and heat a frying pan
  10. Place a buttered cake cutter in the center of the pan to help get a perfect circle
  11. Pour pancake batter into cutter
  12. Let cook for a minute before loosening the pancake with a knife
  13. Gently remove the cutter
  14. Flip the pancake
  15. Cook very lightly, till golden brown

  1. First: a bit of caramelized pineapple
  2. Pancake
  3. Raspberry-Blueberry compote
  4. Pancake
  5. Whipped Cream
  6. Pancake
  7. Caramelized pineapple

  9. Whipped Cream
  10. Strawberry garnish 
  11. Sprinkle on top with icing sugar (optional)
