How To Make Kokis (UYAMU)

Avurudu isn't complete without kokis: crunchy, star-shaped, savoury snacks. Here's how to make some for the Sinhala/Tamil new year.

Serving: 30 kokis


  • Rice Flour 200g
  • Egg 1
  • Sugar 1.5 tbsp
  • Coconut Milk 3/4 cup
  • Turmeric Powder 1/2 tsp
  • Salt 1/2 tsp
  • Oil

You also need kokis cutters, which you're likely to get at Arpico or Pettah. 


  1. Place flour in a bowl and add salt
  2. Add turmeric powder and mix
  3. Add egg and mix 
  4. Add coconut milk and mix down to a smooth batter
  5. Fill a thaatchi (small round pan) with oil and heat over stove
  6. Dip the kokis cutters in the hot oil
  7. Once they are heated dip them in the batter - the batter will stick to its surface
  8. Immerse into the hot oil
  9. Use a thin stick to gently remove the hardened batter from the cutter
  10. Let the kokis deep-fry till golden brown
