It's mango season - here's how to whip up a tasty jar of mango pickle.

Ingredients

  • Mangoes - 2
  • Sugar - 1 tsp
  • Chili flakes - 1 tsp
  • Vinegar - 3 tbsp
  • Salt - 4 tsp + 

Method

  1. Peel and cut 2 mangoes into 6 pieces
  2. Make shallow cuts into each piece
  3. Stuff salt into the cuts
  4. To a tall jar - add 4 tsp salt
  5. Add sugar
  6. Add chili flakes
  7. Add vinegar
  8. Finally add the salt-stuffed mangoes
  9. Shake the jar for a few minutes
  10. Keep it under the sun or in a warm place for 3-4 days
