How To Make Mango Chutney (UYAMU)

It's mango season - here's how to make this classic spicy-sweet chutney.

Serving: 6 people 

Ingredients

  • Large mangoes - 2 
  • Tomato - 1
  • Large onion - 1/2
  • Green chillies - 3
  • Garlic cloves - 5
  • Curry leaves - a handful 
  • Turmeric - 1/2 tsp
  • Chili flakes - 1 tsp
  • Chili powder - 2 tsp
  • Salt - 1 tsp
  • Water - 1/2 cup
  • Coconut milk powder - 2 tsp
  • Sugar - 5 tbsp
  • Oil
  • Bell peppers
  • Parsley 


Method

  1.  
  2. Put mangoes in a bowl
  3. Add curry leaves
  4. Add sliced tomato
  5. Add sliced onion
  6. Add chopped green chillies
  7. Add sliced garlic cloves
  8. Add turmeric
  9. Add chili flakes
  10. Add chili powder
  11. Add salt
  12. Mix thoroughly
  13. Heat oil in a pan
  14. Move the mango mix into the pan
  15. Cook for 10 minutes
  16. Add coconut milk powder
  17. Add sugar
  18. Stir for 5 minutes, till thick, gooey and red
  19. Garnish with bell peppers and parsley
