Deep Fried Octopus Ceviche

<p>Deep Fried Octopus Ceviche cooked by Celebrity Mexican Chef Gabriela Ruiz Lugo.</p> <p> </p> <p>(10g flour, salt, pepper, vegetable oil for deep frying)</p> <p>Ingredients</p> <p>Baby octopus - 3 pieces</p> <p>Tomato 200g</p> <p>Onion 100g</p> <p>Lime juice 30g</p> <p>coriander 10g</p> <p>Green chillie peppers 10g</p> <p>Olive oil 45g</p> <p>Salt as needed</p> <p>Pepper as needed</p> <p>Avocado 120g</p> <p>Method</p> <p>For the Octopus</p> <p>Add salt and pepper to taste</p> <p>Add flour</p> <p>Deep fry, to make it crispy</p> <p> </p> <p>For the Ceviche</p> <p>Mix tomatoes, onion, lime juice, salt, pepper and olive oil.</p> <p> </p> <p>for plating</p> <p>Garnish with the tomato mixture, sliced avocado, coriander and green chilli peppers.</p>


Ritzbury Mocha Cheesecake (UYAMU)

<p>Make your gloomy day better with some of this sweet cheesy goodness!</p> <p><strong>Ingredients</strong></p> <ul> <li>1 packet Tikiri Marie</li> <li>4 tbsp Melted Butter</li> <li>300g Cream Cheese</li> <li>1 cup Sugar</li> <li>100g Melted Ritzbury Dark Cooking Chocolate</li> <li>2 tsp Instant Coffee</li> </ul> <p><strong>Method</strong></p> <ol> <li>Crumble biscuits and add to a pan</li> <li>Add melted butter, mix and pat to form a firm base</li> <li>Chill for 20 minutes</li> <li>In a bowl, blend cream cheese and sugar</li> <li>Add egg yolks and blend</li> <li>Add melted chocolate and instant coffee diluted in a little water and blend</li> <li>Whisk egg whites in a seperate bowl until it forms peaks</li> <li>Fold egg whites into the cheesecake mix</li> <li>Pour over biscuit base and chill for 4 hours</li> <li>Garnish with chocolate shavings</li> </ol>

Sausage Salad With Crispy Veggies

<p dir="ltr">Sausage salad with Crispy Veggies</p> <h2 dir="ltr">Ingredients</h2> <ul> <li dir="ltr"> <p dir="ltr">3 potatoes</p> </li> <li dir="ltr"> <p dir="ltr">3 large tomatoes</p> </li> <li dir="ltr"> <p dir="ltr">5 sausages</p> </li> <li dir="ltr"> <p dir="ltr">1 stem of celery( with leaves)</p> </li> <li dir="ltr"> <p dir="ltr">1 onion</p> </li> <li dir="ltr"> <p dir="ltr">6 TBSP whipped cream</p> </li> <li dir="ltr"> <p dir="ltr">3 TBSP mayonnaise</p> </li> <li dir="ltr"> <p dir="ltr">1 TBSP mustard cream</p> </li> <li dir="ltr"> <p dir="ltr">Pinch of black pepper</p> </li> <li dir="ltr"> <p dir="ltr">Pinch of oregano</p> </li> <li dir="ltr"> <p dir="ltr">6 TBSP olive oil</p> </li> </ul> <h2><br />  Method</h2> <ol> <li dir="ltr"> <p dir="ltr">Cut potatoes into halves and boil with a pinch of salt in water.</p> </li> <li dir="ltr"> <p dir="ltr">Peel potato and chop into small pieces</p> </li> <li dir="ltr"> <p dir="ltr">Add whipped cream, mayonnaise, mustard cream and a pinch of black pepper into a bowl together, to make the dressing.</p> </li> <li dir="ltr"> <p dir="ltr">Add potatoes into the bowl and mix with dressing.</p> </li> <li dir="ltr"> <p dir="ltr">Cut sausages into equal pieces and Fry.</p> </li> <li dir="ltr"> <p dir="ltr">Add chopped tomato, celery stems, onion and celery leaves into a large bowl</p> </li> <li dir="ltr"> <p dir="ltr">Season with a pinch of oregano, 3 TBSP of  olive oil and a squeeze of lemon.</p> </li> <li dir="ltr"> <p dir="ltr">Add fried sausages into the bowl and mix.<br /> Add potato salad and veggie/ sausage salad separately onto a plate.</p> </li> <li dir="ltr"> <p dir="ltr">Serve</p> </li> </ol> <p> </p>
